Drying out the skin of a trophy fish?

I've seen (on T.V.) large sections of fish skin, usually large and scaly ones, and sometimes the entire fish's skin, besides the head and tail. I was wondering how that works, do you just leave it in the sun on a dry sunny day? is there a process, and if I wash it real good, will it stink?
